The only guy I ever heard of who really put on size and got cut at the same time was on steroids and ephedra. Proof that with enough chemicals, there’s no need for intelligent training.
Otherwise, from a nutrition standpoint, gaining and cutting are opposing goals. If you have a good clean diet, with the right ratios of proteins, carbs, and fats, then gaining is going to be a slight increase in calories, and cutting is going to be a slight decrease in calories.
If the question you are asking is "how do I add size without becoming a fat lop", then the answer is to increase calories without adding ice cream and twinkies. If you end up with an increase in bodyfat at the same time you increase muscle anyway, plan for a cutting phase after your gaining phase. A pretty popular plan in my gym bulk in the winter and cut in the summer.
